I was recently asked what most excites me about food, right now and for the upcoming year. My answer was immediate: the way food connects us. Food and recipes place us in a continuity that goes all the way back to our beginnings. Right now, they bring us together in community. Tradition is the means by which this happens—the magic sauce that bonds.
The social, communal, rhythmic nature of restaurants is important. They are places not just to talk, but to share oxygen, trade molecules, to sync up, to “mutual phase lock” or “entrain.”
